Rainy days are for crafts, and baking.... today I threw this together to make a delicious pumpkin cake.
2 cups spelt flour, 2 eggs, 2 tsp baking soda, 1tsp cinnamon, 1/2 tsp nutmeg, 1/8 tsp cloves, 1/2 c brown cane sugar, 1 can of organic pumpkin puree 1/4 c almond milk. Put in a greased 8x8 pan and cook at 375 until toothpick comes out clean (sorry I didn’t really time it... about 30 minutes I’m guessing).
